Once Upon A Time Recipes

It's Wednesday and time for a recipe at Cathy's blog A Bit of the Blarney! I'm joining Cathy again for 'Once Upon A Time Recipes'.
This isn't really a time-honored recipe that has been in our family for a long time, but I hope it will be!

I am a carb addict, and I especially love bread, and for me, no meal is complete without bread. And I usually like to have my bread dipped in oil rather than to butter it (with the exception of biscuits, then I love lots of butter slathered on!).
While having dinner at the Irish restaurant Raglan Road in Disney we were served brown bread with a Guinness Reduction to dip it in, and it was the best! So I searched online for the recipe and it's actually very easy:

1 Pint Guinness
2 Cups Sugar

Combine the Guinness and sugar in a large stockpot. Bring to a boil and reduce to simmer until reduced by half (about one hour). Remove from the heat and allow to cool at room temperature. Do not leave pot unattended while it is coming to a boil as it may boil over. It can be served with olive oil, and it's a wonderful dip for all kinds of bread, but it is especially good when served with Irish brown bread.

  6. This looks like a great recipe. Thanks for sharing. I love bread dipped in olive oil too. I sometimes add herbs and a little cheese to the oil.
